- 2 cups fresh basil leaves
- 1/4 cup toasted pine nuts
- 2 garlic cloves
- 1/2 cup Greek yogurt (full-fat or low-fat)
- 1/2 cup grated Parmesan cheese
- Juice of 1 lemon
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions in salted boiling water until al dente. Reserve some pasta water before draining.
- In a food processor, combine basil, pine nuts, garlic, Parmesan cheese, olive oil, salt, and pepper. Blend until smooth.
- In a large bowl, mix the pesto with Greek yogurt and lemon juice until well combined.
- Add the drained pasta to the pesto mixture and toss until coated. If needed, add reserved pasta water to achieve desired creaminess.
