  • 4 ears fresh corn on the cob
  • 1 medium red onion, finely chopped
  • 1 jalapeño pepper, seeds removed and finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh cilantro, chopped
  • 2 tablespoons freshly squeezed lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the shucked corn directly on the grill grates for 10-15 minutes, turning occasionally until tender and slightly charred.
  3. While the corn is grilling, chop the red onion, jalapeño, cherry tomatoes, and cilantro.
  4. Once grilled, let the corn cool slightly before cutting off the kernels into a bowl.
  5. In a large bowl, mix the grilled corn kernels with chopped veggies. Add lime juice and season with salt and pepper.
