  • 1 lb Brussels sprouts, trimmed and halved
  • 1 whole garlic bulb
  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • 1 tbsp fresh lemon juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Trim the Brussels sprouts and cut larger ones in half. Slice the top off the garlic bulb, drizzle with olive oil, and wrap in foil.
  3. In a small saucepan, melt the butter over medium heat until golden brown.
  4. Toss the Brussels sprouts with salt, pepper, and browned butter in a bowl.
  5. Spread Brussels sprouts on a baking sheet and add wrapped garlic; roast for 25-30 minutes until golden.
  6. Squeeze roasted garlic into the sprouts, add lemon juice, and toss before serving.
