  • 2 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 stalks celery, diced
  • 1 medium yellow onion, diced
  • 2 cups low-sodium chicken broth
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup biscuit mix
  • ½ cup milk or cream
  • 1 tbsp low-sodium soy sauce
  • 1 tsp dried thyme
  • ½ tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop chicken into bite-sized pieces and dice the onion, celery, carrots, and garlic.
  3. In a large pot over medium heat, melt butter. Sauté onions, celery, carrots, and garlic until softened.
  4. Add chicken and seasonings; cook until chicken is no longer pink.
