Description

Ingredients

  • 8 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 bell pepper, diced (any color)
  • 1/4 red onion, finely chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop cherry tomatoes, cucumber, bell pepper, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until emulsified.
  4. In a large mixing bowl, combine the cooled pasta and chopped vegetables. Pour dressing over the top and toss gently to coat evenly.
  5. Add fresh basil and give everything one last toss.
  6. Chill in the fridge for at least 30 minutes before serving.
