Ingredients

  • 1.5 pounds flank steak
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup extra virgin olive oil
  • 4 garlic cloves, minced
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons brown sugar
  • 1 teaspoon black pepper
  • 2 tablespoons fresh herbs (thyme or rosemary), chopped

Instructions

  1. In a bowl, whisk together soy sauce, olive oil, garlic, lemon juice, brown sugar, black pepper, and herbs until the sugar dissolves.
  2. Place the flank steak in a resealable bag or dish and pour the marinade over it. Seal and refrigerate for at least 2 hours or overnight for best flavor.
  3. Preheat your grill to medium-high heat (about 400°F).
  4. Remove the steak from the marinade and grill for 5-7 minutes per side until charred and medium-rare.
  5. Let the steak rest for 8-10 minutes before slicing against the grain into thin strips.
