Ingredients
- 2 large sweet onions, thinly sliced
- 1 sheet pre-rolled puff pastry (about 10 oz)
- 3 tbsp balsamic vinegar
- 2 tsp fresh thyme leaves
- 2 tbsp brown sugar
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and grease a muffin tin with nonstick spray.
- In a skillet over medium heat, warm olive oil and add sliced onions. Cook, stirring occasionally until translucent (about 10 minutes).
- Stir in brown sugar, balsamic vinegar, thyme, salt, and pepper. Continue cooking until caramelized (another 5 minutes).
- Spoon the onion mixture evenly into muffin cups.
- Roll out puff pastry and cut into squares slightly larger than muffin cups. Place over the onion mixture and tuck edges inside.
