  • 2 large sweet onions, thinly sliced
  • 1 sheet pre-rolled puff pastry (about 10 oz)
  • 3 tbsp balsamic vinegar
  • 2 tsp fresh thyme leaves
  • 2 tbsp brown sugar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and grease a muffin tin with nonstick spray.
  2. In a skillet over medium heat, warm olive oil and add sliced onions. Cook, stirring occasionally until translucent (about 10 minutes).
  3. Stir in brown sugar, balsamic vinegar, thyme, salt, and pepper. Continue cooking until caramelized (another 5 minutes).
  4. Spoon the onion mixture evenly into muffin cups.
  5. Roll out puff pastry and cut into squares slightly larger than muffin cups. Place over the onion mixture and tuck edges inside.
  6. Bake for 20 minutes or until golden brown. Cool for a few minutes before flipping onto a plate.
