  • 1 can (5 oz) tuna, drained
  • 1 cup sweetcorn (fresh or frozen)
  • 2 spring onions, finely chopped
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup cooking oil (vegetable or olive)

Instructions

  1. Prepare your ingredients by draining the tuna and chopping the spring onions.
  2. In a large bowl, mix together the tuna, sweetcorn, spring onions, flour, baking powder, salt, and pepper until well combined.
  3. Add the eggs to the mixture and stir until cohesive.
  4. Heat oil in a skillet over medium heat. Once shimmering, scoop out spoonfuls of batter into the pan and flatten slightly.
  5. Fry for about 3-4 minutes on each side until golden brown.
