  • 2 slices sourdough bread
  • 4 oz Swiss cheese, sliced
  • 1 cup fresh mushrooms (cremini or button), sliced
  • 2 tbsp unsalted butter
  • 1/2 tsp garlic powder
  • Fresh parsley (optional), finely chopped for garnish

Instructions

  1. Clean and slice the mushrooms thickly.
  2. In a skillet, melt 1 tablespoon of butter over medium heat. Add mushrooms and cook until golden brown, about 5 minutes. Stir in garlic powder and mix well.
  3. While mushrooms cook, heat another pan on medium-low and butter one side of each slice of sourdough. Toast until golden brown.
  4. On the unbuttered sides of two toasted slices, layer the sautéed mushrooms and top generously with Swiss cheese.
  5. Place the remaining bread slices on top and cook over low heat until the cheese melts and both sides are golden brown, about 3–4 minutes per side.
