- 2 lbs sweet potatoes, peeled and cubed
- 1 lb ground meat (beef or lamb)
- 1 medium onion, chopped
- 2 carrots, diced
- 1 cup frozen peas
- 3 cloves garlic, minced
- 1 cup low-sodium vegetable stock
- 2 tbsp olive oil
- 1 tsp dried thyme (or fresh)
- 2 tbsp butter
- 1/4 cup milk or cream
Instructions
- Boil sweet potatoes in salted water for about 15 minutes until tender. Drain and mash with butter and milk until smooth.
- In a skillet, heat olive oil over medium heat. Sauté onions and carrots until softened, about 5-7 minutes.
- Add ground meat to the skillet; cook until browned (8 minutes). Stir in garlic and thyme.
- Pour in vegetable stock, scraping up brown bits; simmer until thickened (5 minutes). Stir in peas.
- Preheat oven to 400°F (200°C). In a baking dish, layer the meat mixture, then top with sweet potato mash. Smooth with a spatula.
- Bake for 25-30 minutes until golden brown on top.
