  • 2 lbs sweet potatoes, peeled and cubed
  • 1 lb ground meat (beef or lamb)
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 1 cup frozen peas
  • 3 cloves garlic, minced
  • 1 cup low-sodium vegetable stock
  • 2 tbsp olive oil
  • 1 tsp dried thyme (or fresh)
  • 2 tbsp butter
  • 1/4 cup milk or cream

Instructions

  1. Boil sweet potatoes in salted water for about 15 minutes until tender. Drain and mash with butter and milk until smooth.
  2. In a skillet, heat olive oil over medium heat. Sauté onions and carrots until softened, about 5-7 minutes.
  3. Add ground meat to the skillet; cook until browned (8 minutes). Stir in garlic and thyme.
  4. Pour in vegetable stock, scraping up brown bits; simmer until thickened (5 minutes). Stir in peas.
  5. Preheat oven to 400°F (200°C). In a baking dish, layer the meat mixture, then top with sweet potato mash. Smooth with a spatula.
  6. Bake for 25-30 minutes until golden brown on top.
