  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 1 cup fresh pineapple, diced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons cornstarch
  • 2 tablespoons lime juice
  • 1 teaspoon sesame oil

Instructions

  1. Prepare your ingredients by chopping garlic and ginger and dicing pineapple.
  2. In a bowl, mix soy sauce, brown sugar, lime juice, garlic, ginger, and sesame oil. Let the marinade sit for 10 minutes.
  3. Marinate chicken thighs in half the mixture in a resealable bag for at least 30 minutes.
  4. Heat oil in a skillet over medium-high heat and sear chicken thighs skin-side down for 5-7 minutes.
  5. Add pineapple around the chicken and pour remaining marinade over everything. Bring to a simmer.
  6. Transfer to a preheated oven at 375°F (190°C) and bake uncovered for 25-30 minutes until cooked through.
