  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 cup fresh figs, chopped (or fig jam)
  • 1 tsp ground star anise
  • 1 tsp vanilla extract
  • 1 egg yolk

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a small saucepan over low heat, combine chopped figs and 2 tablespoons sugar until soft, stirring until jam-like consistency is reached. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg yolk and vanilla extract; mix well.
  4. Gradually sift in the flour and ground star anise while gently stirring until combined; do not overmix.
  5. Scoop tablespoon-sized portions of dough onto prepared sheets, using your thumb or the back of a spoon to create indentations in each ball.
  6. Fill each indentation generously with fig jam.
  7. Bake for 12-15 minutes until golden around the edges but still soft in the center. Let cool before serving.
