  • 1 package (16 oz) phyllo dough, thawed
  • 4 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 2 tablespoons fresh dill, chopped
  • 1 medium onion, finely chopped
  • 4 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Brush a baking dish with olive oil.
  2. In a skillet over medium heat, heat 2 tablespoons of olive oil. Add chopped onion and sauté until translucent (about 5 minutes). Stir in the spinach and cook until wilted (about 3 minutes).
  3. Remove from heat and stir in feta cheese, dill, salt, and pepper. Let the mixture cool slightly.
  4. On a clean surface, lay out one sheet of phyllo dough and brush lightly with olive oil. Layer three more sheets on top.
  5. Spoon the spinach mixture along one edge of the layered phyllo. Fold over the edges to create a pocket around the filling.
  6. Place in the prepared baking dish, brush the top with remaining olive oil, and bake for 30-35 minutes or until golden brown.
