  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 medium red onion, diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups low-sodium chicken broth
  • 2 tablespoons Ethiopian spice blend (Berbere)
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 bell peppers, diced (any color)
  • ½ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Crushed red pepper flakes to taste

Instructions

  1. Prep your ingredients by dicing the onion and bell peppers and mincing the garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes).
  3. Add diced chicken breasts; cook until browned on all sides (7–10 minutes).
  4. Stir in garlic, Berbere spice blend, cumin, salt, pepper, and crushed red pepper flakes; cook for another minute.
  5. Pour in diced tomatoes and chicken broth; bring to a simmer.
  6. Add black beans and bell peppers; simmer on low heat for an additional 10 minutes.
  7. Stir in lime juice and cilantro before serving.
