  • 8 cups cubed day-old sourdough bread
  • 1 lb Italian sausage (spicy or mild)
  • 2 cups diced tart apples (like Granny Smith)
  • 2 cups chopped Lacinato kale
  • 1 cup diced onion
  • 1 cup diced celery
  • 2 cups low-sodium chicken broth
  • 4 tbsp unsalted butter
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, melt butter. Add onion and celery; sauté until soft (about 5 minutes).
  3. Add sausage; cook until browned (approximately 7 minutes).
  4. Stir in apples and kale; cook until kale wilts (about 3-4 minutes).
  5. In a large bowl, combine the sautéed mixture with sourdough cubes and gradually add chicken broth until well mixed.
  6. Transfer to a greased baking dish and bake uncovered for about 30 minutes until golden brown.
