  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup cherry jam or fresh cherries, pitted
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy. Mix in vanilla extract and salt. Gradually add flour until just combined.
  3. Form the dough into a disk, wrap in plastic wrap, and chill for 30 minutes in the refrigerator.
  4. Roll out half of the dough on a floured surface to about ¼ inch thick and cut into desired shapes using cookie cutters.
  5. Place half of the cut-out cookies on the prepared baking sheets, adding a small dollop of cherry filling in the center before topping with another cookie shape.
  6. Bake for 12-15 minutes or until lightly golden around the edges. Allow to cool slightly before transferring to wire racks.
