  • 1 cup frozen peas
  • 6 large eggs
  • 1 cup feta cheese, crumbled
  • 1/2 cup whole milk (or almond/oat milk)
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté spinach until wilted (about 3 minutes).
  3. In a large bowl, whisk together eggs, milk, salt, pepper, and oregano until frothy.
  4. Stir in the sautéed spinach and frozen peas; gently fold in crumbled feta.
