  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 lb fresh Brussels sprouts, trimmed and halved
  • 1/4 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp apple cider vinegar
  • Optional: Fresh thyme or rosemary for garnish

Instructions

  1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Pat chicken breasts dry and season both sides generously with salt and pepper.
  3. In a bowl, whisk together maple syrup, Dijon mustard, olive oil, apple cider vinegar, garlic powder, and optional herbs until smooth.
  4. Place Brussels sprouts on one side of the baking sheet, drizzle half of the sauce over them, and toss to coat.
  5. Arrange seasoned chicken breasts on the other side of the baking sheet and brush generously with the remaining sauce.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and Brussels sprouts are tender.
  7. Let it rest briefly before serving; plate alongside the Brussels sprouts.
