- 2 cups cooked rice (Jasmine or Brown)
- 2 tbsp low-sodium soy sauce
- 1 cup mixed vegetables (carrots & bell peppers)
- 2 tbsp toasted sesame seeds
Instructions
- Preheat oven to 400°F (200°C). In a large bowl, mix ground chicken, minced garlic, grated ginger, panko breadcrumbs, and soy sauce until well combined.
- Form small meatballs (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
- Bake meatballs for 20 minutes or until golden brown and fully cooked.
- Meanwhile, prepare the rice according to package instructions; fluff once cooked.
- Sauté sliced bell peppers and carrots in a skillet over medium heat for about 4-5 minutes until tender but still crunchy.
- Assemble bowls by layering rice at the bottom, followed by meatballs and sautéed veggies. Garnish with chopped green onions and toasted sesame seeds.
