- 1 lb (450g) high-quality sausage meat
- 1 cup (100g) panko breadcrumbs
- 1 tsp salt
- ½ tsp black pepper
- ½ cup (60g) all-purpose flour
- 2 large eggs (for coating)
- Vegetable oil (for frying)
Instructions
- Boil the large eggs in salted water for 7-8 minutes for a soft center. Transfer them to an ice bath immediately.
- In a bowl, mix the sausage meat with salt, pepper, and any desired spices.
- Flatten a handful of the sausage mixture in your palm and wrap it around each peeled egg until fully covered.
- Set up a breading station: one plate with flour, another with beaten eggs, and a third with breadcrumbs. Coat each sausage-wrapped egg in flour, dip in egg wash, then roll in breadcrumbs.
- Heat vegetable oil in a deep pan to about 350°F (175°C) and fry each Scotch egg until golden brown on all sides (4-5 minutes). Drain on paper towels before serving.
