  • 1 ½ cups all-purpose flour
  • 1 cup mixed sugar (½ cup brown sugar, ½ cup granulated sugar)
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 large eggs, room temperature
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the pumpkin puree, sugars, oil, eggs, and vanilla until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined; do not overmix.
  5. Fill each muffin tin about three-quarters full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow to cool for five minutes before transferring to a wire rack.
