- ¾ cup granulated sugar

- ½ tsp ground ginger
- 1 cup heavy cream
- ¼ cup powdered sugar (sifted)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the prepared pan to form a crust.
- In another bowl, whisk together pumpkin puree, granulated sugar, eggs, cinnamon, nutmeg, and ginger until smooth.
- Spread the pumpkin filling evenly over the crust.
- Bake for about 30 minutes or until set around the edges and slightly jiggly in the center.
- While cooling, whip heavy cream with powdered sugar until soft peaks form.
- Once cooled completely, lift the bars from the pan using parchment handles and slice into squares. Top each square with whipped cream before serving.
