  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted and cooled
  • 1 cup canned pumpkin puree (100% pure)
  • ¾ cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • 1 cup heavy cream
  • ¼ cup powdered sugar (sifted)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the prepared pan to form a crust.
  3. In another bowl, whisk together pumpkin puree, granulated sugar, eggs, cinnamon, nutmeg, and ginger until smooth.
  4. Spread the pumpkin filling evenly over the crust.
  5. Bake for about 30 minutes or until set around the edges and slightly jiggly in the center.
  6. While cooling, whip heavy cream with powdered sugar until soft peaks form.
  7. Once cooled completely, lift the bars from the pan using parchment handles and slice into squares. Top each square with whipped cream before serving.
