  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 8 oz fettuccine or spaghetti
  • 4 cups fresh spinach
  • Juice and zest of 1 lemon
  • 4 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides (about 5-7 minutes per side). Remove from pot and set aside.
  2. In the same pot, sauté minced garlic for about 30 seconds until fragrant.
  3. Add chicken broth and pasta; bring to a gentle boil. Cover and cook until pasta is al dente (8-10 minutes).
  4. Chop the seared chicken into bite-sized pieces. Add back into the pot along with fresh spinach once pasta is cooked. Stir until spinach wilts.
  5. Squeeze lemon juice and sprinkle lemon zest over the dish before serving. Top with grated Parmesan cheese.
