- 8 oz fettuccine or spaghetti
- 4 cups fresh spinach
- Juice and zest of 1 lemon
- 4 cups low-sodium chicken broth
- 2 tbsp olive oil
- ½ cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides (about 5-7 minutes per side). Remove from pot and set aside.
- In the same pot, sauté minced garlic for about 30 seconds until fragrant.
- Add chicken broth and pasta; bring to a gentle boil. Cover and cook until pasta is al dente (8-10 minutes).
- Chop the seared chicken into bite-sized pieces. Add back into the pot along with fresh spinach once pasta is cooked. Stir until spinach wilts.
- Squeeze lemon juice and sprinkle lemon zest over the dish before serving. Top with grated Parmesan cheese.
