- 20 ladyfinger cookies (savoiardi)
- 1 cup strong brewed coffee
- 2 tsp pumpkin spice blend
- Cocoa powder for dusting
Instructions
- In a large mixing bowl, beat mascarpone cheese and powdered sugar until smooth. Add heavy cream and vanilla extract; whip until soft peaks form.
- Gently fold in pumpkin puree and pumpkin spice blend until well combined.
- In a shallow dish, mix brewed coffee with a splash of vanilla extract. Quickly dip each ladyfinger into the coffee mixture.
- Layer soaked ladyfingers in a serving dish and spread half of the pumpkin-spice cream mixture over them evenly.
- Repeat with another layer of dipped ladyfingers followed by the remaining cream mixture. Smooth the top with a spatula.
