  • 1 cup mascarpone cheese
  • 1 cup pumpkin puree (100% pure)
  • 1 cup heavy cream, chilled
  • 3/4 cup powdered sugar
  • 2 tsp pure vanilla extract
  • 20 ladyfinger cookies (savoiardi)
  • 1 cup strong brewed coffee
  • 2 tsp pumpkin spice blend
  • Cocoa powder for dusting

Instructions

  1. In a large mixing bowl, beat mascarpone cheese and powdered sugar until smooth. Add heavy cream and vanilla extract; whip until soft peaks form.
  2. Gently fold in pumpkin puree and pumpkin spice blend until well combined.
  3. In a shallow dish, mix brewed coffee with a splash of vanilla extract. Quickly dip each ladyfinger into the coffee mixture.
  4. Layer soaked ladyfingers in a serving dish and spread half of the pumpkin-spice cream mixture over them evenly.
  5. Repeat with another layer of dipped ladyfingers followed by the remaining cream mixture. Smooth the top with a spatula.
  6. Cover and refrigerate for at least four hours or overnight. Before serving, dust cocoa powder on top.
