  • 1 cup fresh green beans, trimmed
  • 1/3 cup crumbled blue cheese

  • Salt and pepper to taste

Instructions

  1. 1. Prepare the Potatoes: Wash the new potatoes thoroughly. Halve larger ones and boil in salted water for 15-20 minutes until fork-tender.
  2. 2. Blanch the Green Beans: Boil another pot of water; add green beans and blanch for 3-4 minutes until bright green. Drain and plunge into an ice bath to stop cooking.
  3. 3. Make the Dressing: In a bowl, whisk together olive oil, lemon juice, and Dijon mustard until creamy.
  4. 4. Combine Ingredients: In a large mixing bowl, combine the cooled potatoes and blanched green beans. Crumble blue cheese over the top.
  5. 5. Toss & Serve: Drizzle dressing over the salad, season with salt and pepper, and gently toss to coat all ingredients evenly.
