- 1 cup fresh green beans, trimmed

Instructions

- 2. Blanch the Green Beans: Boil another pot of water; add green beans and blanch for 3-4 minutes until bright green. Drain and plunge into an ice bath to stop cooking.
- 3. Make the Dressing: In a bowl, whisk together olive oil, lemon juice, and Dijon mustard until creamy.
- 4. Combine Ingredients: In a large mixing bowl, combine the cooled potatoes and blanched green beans. Crumble blue cheese over the top.
