  • 1 cup granulated sugar
  • 1 cup fresh blueberries (or frozen)
  • 2 tsp lemon zest
  • 1/3 cup lemon juice (freshly squeezed)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs (room temperature)
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup unsalted butter (melted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix melted butter with sour cream (or yogurt), eggs, lemon juice, and zest until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined. Carefully fold in the blueberries.
  5. Pour the batter into the prepared loaf pan and bake for 55-65 minutes or until golden brown and a toothpick comes out clean.
  6. Let it cool in the pan for 10 minutes before transferring it onto a wire rack.
