  • 2 cups fresh corn (about 3 ears)
  • 1 cup mayonnaise
  • 3 tbsp freshly squeezed lime juice
  • 1 tsp chili powder
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente; drain and cool.
  2. Grill fresh corn on medium-high heat until charred (about 10 minutes). Let cool and cut off kernels.
  3. In a large bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  4. Add cooled pasta, corn kernels, cilantro, red onion, and cotija cheese to the bowl. Mix gently until well combined.
