  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 ripe pears, sliced
  • ¼ cup Dijon mustard
  • ¼ cup pure maple syrup
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup low-sodium chicken broth
  • 2 sprigs fresh thyme

Instructions

  1. Prep ingredients by washing and chopping everything. Mince garlic and slice pears.
  2. In a bowl, whisk together Dijon mustard, maple syrup, olive oil, salt, and pepper. Coat chicken breasts in the mixture and marinate for at least 30 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Sear marinated chicken for about 5 minutes per side until golden brown.
  4. Add minced garlic to the skillet and sauté until fragrant (about 1 minute). Then add sliced pears and cook until warmed through.
  5. Pour in chicken broth and remaining marinade; simmer until chicken is cooked through (internal temperature should reach 165°F).
  6. Serve chicken and pears over rice or quinoa, drizzling sauce on top and garnishing with fresh thyme.
