  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup ice water
  • 2 large eggs
  • 1/2 cup granulated sugar (for filling)
  • 1/2 cup freshly squeezed lemon juice
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour and sugar; cut in cold butter until crumbly. Gradually add ice water until dough forms.
  2. Chill the dough in plastic wrap for 30 minutes. Roll out to 1/8 inch thick and transfer to a tart pan.
  3. Prick the crust with a fork, bake for 15-20 minutes until lightly golden.
  4. For the filling, whisk eggs, sugar, lemon juice, cornstarch, and salt until smooth. Fold in blueberries.
  5. Pour filling into baked crust and bake for another 25-30 minutes until set but slightly jiggly in the center.
