  • 4 lamb shanks (about 2 lbs)
  • 2 tablespoons olive oil
  • 2 medium carrots, chopped
  • 3 medium Yukon Gold potatoes, cubed
  • 1 large onion, finely chopped
  • 4 cloves garlic, crushed
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 2 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping vegetables and crushing garlic.
  2. Heat olive oil in a large pot over medium heat. Season lamb shanks with salt and pepper, then brown on all sides.
  3. Remove the shanks and sauté onions and carrots in the same pot until softened.
  4. Stir in tomato paste; deglaze the pot with red wine while scraping up browned bits.
  5. Add beef broth, return the lamb shanks to the pot with thyme and bay leaves, then simmer covered for 1.5 to 2 hours until fork-tender.
  6. In the last 30 minutes of cooking, add potatoes.
