- 1 large onion, diced

- 1 cup low-sodium chicken broth
- Juice of 2 limes

- 1 tsp chili powder
- 2 ripe kiwis, chopped
- ½ cup fresh cilantro, chopped
- 8 soft corn tortillas
Instructions
- Preheat oven to 300°F (150°C). In a large pot, heat olive oil over medium heat and sear the brisket on all sides until golden brown (about 4 minutes per side).
- Add diced onions and minced garlic; cook until onions are translucent (3-5 minutes).
- Pour in chicken broth, lime juice, cumin, and chili powder. Bring to a simmer, then cover tightly.
- Transfer pot to the oven and braise for about 3 hours or until fork-tender.
- Meanwhile, prepare kiwi salsa by mixing chopped kiwis with cilantro and lime juice in a bowl.
- Once the brisket is done, shred it with two forks and serve in warm taco shells topped with kiwi salsa.
