  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 inch fresh ginger, grated
  • 1/2 cup low-sodium soy sauce
  • 2 tbsp erythritol (or 2 tbsp honey for non-keto)
  • 1 tbsp toasted sesame oil
  • 1 tbsp cornstarch (optional)
  • 2 tbsp rice vinegar
  • 2 green onions, chopped (for garnish)

Instructions

  1. Prepare your ingredients by mincing garlic and grating ginger.
  2. In a bowl, mix soy sauce, garlic, ginger, erythritol (or honey), and sesame oil to create the marinade.
  3. Place chicken breasts in a resealable bag or bowl and pour the marinade over them. Refrigerate for at least 30 minutes.
  4. Heat a large skillet over medium heat and add marinated chicken breasts. Cook for about 5-7 minutes per side until golden brown and cooked through.
  5. If desired, remove chicken from the skillet and add remaining marinade back into the pan. Thicken with cornstarch mixed with water while simmering on low heat.
  6. Slice chicken and drizzle with thickened sauce before garnishing with green onions. Serve with cauliflower rice or steamed vegetables.
