Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 inch fresh ginger, grated
- 1/2 cup low-sodium soy sauce
- 2 tbsp erythritol (or 2 tbsp honey for non-keto)
- 1 tbsp toasted sesame oil
- 1 tbsp cornstarch (optional)
- 2 tbsp rice vinegar
- 2 green onions, chopped (for garnish)
Instructions
- Prepare your ingredients by mincing garlic and grating ginger.
- In a bowl, mix soy sauce, garlic, ginger, erythritol (or honey), and sesame oil to create the marinade.
- Place chicken breasts in a resealable bag or bowl and pour the marinade over them. Refrigerate for at least 30 minutes.
- Heat a large skillet over medium heat and add marinated chicken breasts. Cook for about 5-7 minutes per side until golden brown and cooked through.
- If desired, remove chicken from the skillet and add remaining marinade back into the pan. Thicken with cornstarch mixed with water while simmering on low heat.
