- 4 boneless, skinless chicken breasts
- 1/2 cup honey
- 1/2 cup BBQ sauce
- 3 cloves fresh garlic, minced
- 1 lb new potatoes (or Yukon Gold)
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp butter
- Salt and pepper to taste
- 1 tsp smoked paprika
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Season chicken breasts with salt and pepper.
- In a bowl, mix honey, BBQ sauce, smoked paprika, and lemon juice. Whisk until combined.
- Place seasoned chicken in the baking dish and pour half of the BBQ glaze over it.
- Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- Meanwhile, boil new potatoes until fork-tender. Drain and return to the pot.
- Add butter, heavy cream, minced garlic, salt, pepper, and Parmesan cheese to potatoes; mash until creamy but chunky.
