Ingredients
- 1 (12-14 lbs) whole turkey, fresh or thawed
- 1 cup unsalted butter, softened
- 6 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh sage, chopped
- 1 tbsp coarse salt
- 1 tsp black pepper
- 2 lemons, halved
- 2 tbsp olive oil
Instructions
- Preheat oven to 325°F (165°C).
- Mix the softened butter with garlic, rosemary, thyme, sage, salt, and pepper until well combined.
- Gently loosen the turkey skin and spread half of the herb mixture underneath. Rub the remaining mixture over the outside of the turkey.
- Stuff cavity with halved lemons and extra herbs for moisture.
- Place turkey on a roasting rack in a large pan and roast for about 13-15 minutes per pound or until internal temperature reaches 165°F (74°C).
- Allow to rest for 20-30 minutes before carving.
