  • 1 medium onion, finely chopped
  • 3 cloves fresh garlic, minced
  • 1 cup low-sugar tomato sauce
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup chopped dill pickles
  • 2 cups shredded romaine lettuce
  • Salt and pepper to taste
  • 1 tsp paprika
  • 3 cups whole wheat pasta or cauliflower rice

Instructions

  1. Preheat oven to 350°F (175°C). Spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, sauté chopped onions and minced garlic in olive oil until translucent (about 5 minutes).
  3. Add ground beef to the skillet and cook until browned; drain excess fat.
  4. Stir in tomato sauce, salt, pepper, and paprika; simmer for 5 minutes.
  5. Mix in cooked pasta or cauliflower rice until well combined.
  6. Layer half of the mixture in the prepared baking dish, sprinkle with half the cheese, then repeat with remaining mixture and top with more cheese.
  7. Bake for 25-30 minutes until bubbly and golden brown. Let cool slightly before serving with lettuce and pickles on top.
