- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced

- 1 cup demi-glace
- 4 tbsp unsalted butter
- 1/2 cup full-bodied red wine
- 1/2 cup beef stock
Instructions
- Trim excess fat from the rack of lamb and pat dry.
- In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Rub over the lamb and marinate for at least one hour.
- Preheat the grill to high heat (450°F). Sear each side of the rack for 4-5 minutes until browned.
- Reduce grill heat to medium and cook until the internal temperature reaches 130°F (about 15-20 minutes).
- In a saucepan, simmer red wine and beef stock until reduced by half. Whisk in butter until smooth.
- Let the lamb rest before slicing into individual chops and drizzling with demi-glace butter.
