- ½ cup red wine
- 2 tsp dried oregano (or 1 tbsp fresh)
- 1 tsp dried thyme (or 2 tsp fresh)
- Salt and pepper to taste
- 3 cups water or broth
Instructions
- Heat olive oil in a large pot over medium-high heat. Season lamb pieces with salt and pepper; sear until browned on all sides (5-7 minutes).
- Add minced garlic and chopped green onions to the pot. Stir until fragrant (1-2 minutes).
- Deglaze the pot with red wine, scraping up any brown bits; simmer for 2-3 minutes.
- Stir in diced tomatoes, drained artichokes, oregano, thyme, and mix well.
- Add enough water or broth to cover ingredients (about 3 cups). Bring to a gentle boil, then reduce heat to low.
- Cover tightly and simmer for about 1½ – 2 hours until the lamb is tender.
