Ingredients
- 1 (4 lb) leg of lamb (bone-in preferred)
- 10 cloves fresh garlic
- 2 cups fresh beetroot (peeled and diced)
- 3 tbsp red wine vinegar
- 2 tbsp honey
- 3 tbsp extra virgin olive oil
- 2 sprigs fresh rosemary (chopped)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Make small incisions in the leg of lamb and stuff each with garlic cloves.
- Season the lamb generously with salt and pepper.
- In a bowl, combine beetroot, red wine vinegar, honey, olive oil, salt, and pepper. Mix well.

- Roast for about 1 hour and 30 minutes or until the internal temperature reaches 145°F (63°C).
