Ingredients

  • 1 (4 lb) leg of lamb (bone-in preferred)
  • 10 cloves fresh garlic
  • 2 cups fresh beetroot (peeled and diced)
  • 3 tbsp red wine vinegar
  • 2 tbsp honey
  • 3 tbsp extra virgin olive oil
  • 2 sprigs fresh rosemary (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Make small incisions in the leg of lamb and stuff each with garlic cloves.
  3. Season the lamb generously with salt and pepper.
  4. In a bowl, combine beetroot, red wine vinegar, honey, olive oil, salt, and pepper. Mix well.
  5. Place the beet mixture in a roasting pan and set the seasoned lamb on top.
  6. Roast for about 1 hour and 30 minutes or until the internal temperature reaches 145°F (63°C).
  7. Let the lamb rest for at least 15 minutes before carving. Serve with beetroot chutney.
