Ingredients
- 3–4 lbs beef chuck roast
- 6 cloves garlic, minced
- ¼ cup miso paste (white or red)
- ½ cup low-sodium soy sauce
- 2 large onions, chopped
- 4 large carrots, cut thick
- 2 cups beef broth
- 2 tsp fresh thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Preheat oven to 300°F (150°C).
- Season the beef with salt and pepper. In a large Dutch oven, heat oil over medium-high heat and sear the beef until browned on all sides (about 4 minutes per side). Remove from pot.
- Add onions and garlic to the pot; sauté until translucent (3-5 minutes). Deglaze with a splash of beef broth.
- Stir in miso paste, soy sauce, remaining broth, thyme, bay leaf, and carrots until combined.
- Return the beef to the pot and cover tightly with a lid or foil. Bake for 3 hours, checking tenderness with a fork.
- Let rest for 15 minutes before slicing or shredding.
