  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp baking powder

  • ½ tsp grated nutmeg
  • ¼ tsp salt
  • 1 cup powdered sugar (for filling)
  • 8 oz softened cream cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Line a jelly roll pan with parchment paper.
  2. In a mixing bowl, combine pumpkin puree, sugar, eggs, and melted butter until smooth.
  3. Fold in flour, baking powder, cinnamon, nutmeg, and salt until just combined.
  4. Spread the batter evenly in the prepared pan and bake for 15–20 minutes until it springs back when touched.
  5. While baking, sprinkle powdered sugar on a clean kitchen towel.
  6. Remove the cake from the oven, cool for 5 minutes, then invert onto the towel and peel off parchment paper.
  7. Roll up the cake using the towel to form a log shape; set seam-side down to cool completely.
  8. For the filling, beat cream cheese with powdered sugar until smooth; spread over cooled cake and roll again without the towel.
  9. Wrap tightly in plastic wrap and refrigerate for at least one hour before slicing.
