  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup sun-dried tomatoes packed in oil, chopped
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 8 oz fettuccine pasta (or pasta of choice)
  • 1/2 cup grated parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water.
  2. In a large skillet over medium-high heat, heat the olive oil. Season the chicken breasts with salt and pepper; add them to the skillet and cook until golden brown (5-7 minutes per side). Remove from the skillet and let rest.
  3. In the same skillet, sauté minced garlic until fragrant (about 30 seconds). Add sun-dried tomatoes and cook for another minute.
  4. Pour in heavy cream while scraping up any bits stuck to the pan. Stir in fresh spinach until wilted.
  5. Slice cooked chicken and return it to the skillet along with the drained pasta. Toss gently, adding reserved pasta water as needed for desired creaminess.
  6. Finish by sprinkling grated parmesan cheese over the top before serving.
