  • 2 cups fresh corn kernels (about 23 ears)
  • 1 cup crumbled feta cheese
  • 3 tbsp fresh tarragon, chopped
  • 3 large eggs
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 400°F (200°C). Roll out the puff pastry on a floured surface to about ¼ inch thick. Transfer to a tart pan, pressing gently into corners.
  2. 2. Blind bake the crust for 15 minutes until lightly golden. Remove from oven and set aside.
