  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together flour, baking powder, and cinnamon. Gradually incorporate the dry mixture into the wet ingredients without overmixing.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place on a parchment-lined baking sheet about two inches apart.
  6. Bake for 10 minutes or until golden around the edges but soft in the center. Cool on the baking sheet for five minutes before transferring to a wire rack.
