  • ½ cup unsalted butter, melted and slightly cooled
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp pure mint extract
  • 1 cup semi-sweet chocolate chips
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin pan with nonstick spray.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat melted butter with granulated and brown sugars until creamy. Add eggs one at a time and mix in mint extract.
  4. Fold in chocolate chips gently into the wet mixture.
  5. Spoon cookie dough into muffin cavities and create an indentation in the center.
  6. In a separate bowl, mix brownie batter ingredients (cocoa powder, flour, sugar, melted butter, eggs, mint extract) until combined.
  7. Pour brownie batter into each cookie cup until just full.
  8. Bake for 20-25 minutes or until set but slightly soft in the center. Let cool before serving.
