  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 2 large eggs (room temperature)
  • 1 tsp peppermint extract
  • 1 cup dark chocolate chips (melted)
  • 1/4 cup crushed candy canes

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, beat eggs and peppermint extract until smooth. Combine with dry ingredients to form a sticky dough.
  4. Shape dough into two logs, about 1 inch thick on the prepared baking sheet. Bake for 25 minutes until firm.
  5. Allow to cool for 10-15 minutes, then slice diagonally into 1-inch pieces.
  6. Arrange slices cut side down on the baking sheet and bake for an additional 15-20 minutes until crisp.
  7. Dip half of each biscotti in melted dark chocolate and sprinkle with crushed candy canes.
