  • 1 cup cherries (fresh or thawed from frozen)
  • 1/2 cup heavy cream
  • 1 cup dark chocolate chips
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 375°F (190°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, and sugar. Add eggs, melted butter, and almond extract; mix until just combined.
  3. Pour batter into prepared pan and bake for 12-15 minutes until springy.
  4. While cooling, heat cherries with a tablespoon of sugar in a saucepan until juicy.
  5. Once cooled slightly, invert the cake onto a powdered-sugar-dusted towel and roll tightly.
  6. For the ganache, heat heavy cream until simmering; pour over chocolate chips and stir until smooth.
