- 8 oz rigatoni pasta
- 2 large sweet onions, thinly sliced
- 3 cloves garlic, minced
- 1 cup low-sodium beef or vegetable broth
- 1 cup Gruyère cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 cup heavy cream
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
- 2 tbsp butter
Instructions
- In a large skillet over medium heat, melt butter. Add sliced onions and a pinch of salt. Cook until golden brown and fragrant (about 20 minutes).
- Stir in minced garlic for another minute, then add broth and scrape the bottom of the pan.
- Boil water in another pot, cook rigatoni until al dente. Reserve some pasta water before draining.
- Mix heavy cream and thyme into the onion mixture; let simmer for about 5 minutes until slightly thickened. Stir in both cheeses until melted.
- Combine drained pasta with sauce; add reserved pasta water if needed to reach desired consistency.
- Preheat oven to 375°F (190°C). Transfer to a greased baking dish, top with more cheese, and bake uncovered for 25-30 minutes until bubbly.
