- 3 boneless skinless chicken breasts (about 1 lb)
- 1/2 cup buffalo sauce
- 4 oz cream cheese (softened)
- 1 cup shredded sharp cheddar cheese (divided)
- 2 green onions (chopped)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes clean and poke holes in them with a fork.
- Place potatoes directly on the oven rack and bake for 45-60 minutes until fork-tender.
- While potatoes bake, boil chicken breasts in water for 15-20 minutes until cooked through; shred the chicken in a bowl.
- Mix shredded chicken with buffalo sauce, cream cheese, half of the shredded cheddar, salt, and pepper until well combined.
- Once baked potatoes are cool enough to handle, slice them open lengthwise and fluff the insides with a fork. Stuff each potato with the chicken mixture.
- Top with remaining cheddar cheese and sprinkle green onions; return to the oven for another 10-15 minutes until cheese is melted and golden.
