  • 9 lasagna noodles
  • 2 cups butternut squash (cubed)
  • 10 fresh sage leaves
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 garlic cloves (minced)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Halve the butternut squash, scoop out seeds, drizzle with olive oil, season with salt and pepper, and roast cut side down for 30-40 minutes until tender.
  3. Once cooled, scoop flesh into a bowl and mix with ricotta, minced sage, garlic, nutmeg (if using), salt, and pepper until creamy.
  4. Cook lasagna noodles according to package instructions until al dente; lay flat on parchment paper.
  5. Spread filling onto each noodle and roll tightly; place seam-side down in a greased baking dish.
  6. Top with mozzarella and Parmesan; bake at 375°F (190°C) for about 25 minutes until bubbly.
