- 2 cups butternut squash (cubed)

- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese

- 2 tbsp extra virgin olive oil
- Salt and pepper to taste

Instructions

- Halve the butternut squash, scoop out seeds, drizzle with olive oil, season with salt and pepper, and roast cut side down for 30-40 minutes until tender.
- Once cooled, scoop flesh into a bowl and mix with ricotta, minced sage, garlic, nutmeg (if using), salt, and pepper until creamy.
- Cook lasagna noodles according to package instructions until al dente; lay flat on parchment paper.
- Spread filling onto each noodle and roll tightly; place seam-side down in a greased baking dish.
- Top with mozzarella and Parmesan; bake at 375°F (190°C) for about 25 minutes until bubbly.
