  • 1 sheet puff pastry (thawed)
  • 1 cup fresh asparagus (trimmed and cut into 2-inch pieces)
  • 4 oz goat cheese (crumbled)
  • 2 tbsp fresh tarragon (chopped)
  • 3 large eggs
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface to about 1/8 inch thick. Place it in a greased tart pan.
  3. Blanch the asparagus in boiling salted water for 2-3 minutes, then transfer to ice water.
  4. In a bowl, whisk together eggs, heavy cream, salt, pepper, and crumbled goat cheese until smooth. Mix in chopped tarragon.
  5. Arrange blanched asparagus on the pastry crust and pour the egg mixture over it evenly.
  6. Bake for 25-30 minutes until golden brown. Let cool slightly before slicing.
